Johnnycakes

Native Americans used cornmeal to make plain, flat cakes that were both nourishing and portable. American settlers learned how to make them, too, and called them Johnnycakes.

You'll need:
3/4 to 1 cup corn meal
1 large egg
1 1/2 cups milk
1 teaspoon sugar
1 teaspoon salt
griddle
spray
shortening

Preheat griddle to 375*.

Mix together milk and egg. Add remaining dry ingredients. Batter should be thin. Spray griddle with shortening. Pour batter onto griddle just as you would pancakes. When bubbles form all over and the edges are dry, turn the cakes over and cook them on the other side. Flip them onto a plate and serve them alone or with syrup or jelly. Makes about 20 Johnnycakes.
