View Full Version : Neighboring School District Seeks Culinary Arts Instructor

Are you an experienced teacher? Do you also enjoy cooking? Do you have any back of the house restaurant experience?

A neighboring school district is looking for a culinary arts instructor for the 2008-09 school year. The culinary arts instructor who will be leaving has asked me to post this information.

Applicants must be CTE (Career and technical education) qualified. The school is ideally looking for someone with a teaching background who also has an extensive food service background. (Even if you don't have a teaching degree, you can be certified in Arizona if you have a minimum of 6000 hours of industry experience).

Applicants must have a basic knowledge of the following:

* Sanitation - Serv Safe qualification is a plus applicants should have a basic knowledge of sanitation procedures and safe food handling techniques
* Food storage - basic understanding of FIFO and how to receive, inspect, store, label, and date incoming food shipments.
* Bulk food cooking with knowledge of a variety of cooking techniques i.e. moist heat, dry heat, frying, etc.
* Restaurant or kitchen management experience that includes staff supervision and managing a budget
* Familiarity with tools and equipment - to include use of knives and knife cuts, commercial stand mixers, ovens, steam tables, etc.

P.S. Applicants should be aware that the state CTE culinary arts program is in a state of transition. Most of the culinary arts teachers are former home economics teachers. Home economics is now a defunct program in Arizona.

The problem with culinary arts is that most former home economics teachers have no food service background.

My colleague in Safford has expressed a concern that an instructor without a food service program, will be unable to adequately fill the needs of his/her students.

I myself am a former elementary teacher with a Master's degree in Curriculum and Instruction. I also have a culinary arts degree and six years of experience in the food service industry. I have literally been a dishwasher, busser, server, host, cashier, line cook, kitchen manager, and assistant restaurant manager. I have also been a personal chef, breakfast chef, and fine dining chef.
