recipes for unusual foods

I love prickly pears (cactus fruit). Does anybody out there have any recipes that include prickly pears?
Or do you have any other recipes for unusual foods? Last summer, someone gave me white carrots...I didn't have a clue what to do with them!

I've never tried a prickly pear, but I love to google! I put in recipe "prickly pear" and a lot of stuff came up including jelly, tea, skin care products & margaritas (woohoo!) I also didn't realize you can eat the tunas (the fruit) and the nopales (the cactus pads) - I just thought you ate the pear, so I learned something!

My favorite online source for recipes is epicurious.com, which has recipes from Bon Appetit and Gourmet going back many years. They are very reliable because they've all been tested and published. They have several recipes for prickly pears, including "Pears Poached in Tequila with Prickly Pear-Raspberry Sauce." Sounds good!
