What are some activities with non-english students that have worked well inthe elementary classroom?

Students are usually paired with someone that is bilingual. If this is not possible, they are paired with someone that will assist as much as possible. They are usually pulled out to go to ESOL or with the migrant education paraprofessional.

I teach 4th grade in a school with about 96% Hispanic population. Activities for Language Arts which have been used:
Picture - Word Match
Preschool Readers: Read aloud; student
reads; read together.
Basic alphabet study

I use peer-tutoring. I have also used computer programs to help them learn their letters and sounds.

Peer tutoring and reading partners work well. Also the use of lots of sightword cards, picture cards, and book/cassette packets work well with non-english students.

Try using the CD Rom: First 1000 Words by Usborne. It's a good start for vocabulary development. I also label everything in my classroom and have the student work with a buddy to remove and reapply the labels correctly. The same works with parts of the body and clothing words. My best idea is to have some basic info that these students may need quick access to (i.e. color and number words, names of days and months, along with a basic list of sight words) that I have them cut out and glue onto a large sheet of construction paper. I then let them decorate it with stickers and laminate it. I let them use this "workmat" throughout the day for easy reference. If you need more ideas, feel free to email me at mparik@leeca.org.
